I have a giant fuyu persimmon tree. We eat as much as we can and then peel and dehydrate most of them so we can eat them all winter. When dehydrated they get much sweeter. Hard to keep the birds from eating the fruit at the top of the tree because after the leaves drop in December the remaining persimmons are bright red and look like xmas ornaments.
Did the plum tree today. Turned out there are 3 different variety of plums grafted into one. My suspicions were right.. three different type ripen at different times this stretching out harvest time...
