I want to buy six moinths supply of Koi food and I am wondering if once the bag is opened and the rest stored in vaccuum sealed bags - will the freshness or quality be affected?

If it is sealed and kept in a dark cool space it should be fine!

I used to do that. The food I buy now comes in individual kilo bags, so it makes it easier.

When using larger bags of food, you may wish to try those vacumm storage bags, the ones where you actually use a vacumm cleaner to suck the air out. They're larger and can be opened and resealed.

Yes.Bought a large bag of HiSilk, which comes all in one bag,and Seal-a-Mealed it to smaller bags.Works great.I think it's important to open a new bag when humidity is very low when resealing with Seal-a-Meal.
