Goldfish and a cold water and/or low oxygen environment

Not sure if anyone has seen this article and study.
Essentially, carp/goldfish have the ability to convert lactic acid into ethanol.

      Interesting.

I found out in my 10 gallon goldfish tank to keep the water cold and low oxygen.

I dip my martini glass in and add ice. With an olive. Shaken not stirred.

Wow, I tried to read the research, but got stuck on:

Whole-genome duplication events have provided additional gene copies of the pyruvate dehydrogenase multienzyme complex that have evolved into a pyruvate decarboxylase, while other copies retained the essential function of the parent enzymes.

OK, now I know I even have MORE to learn!!!

It would be nice if they printed these articles in English, wouldn't it!
(The first article is in layman terms for the rest of us)

Bottom line though, goldfish are pretty hardy, and now we know why.

I've alway said that my one goldfish will outlive everybody in the pond. Now I know one reason why. When I use to have it indoor in a small tote box I use to turn off the filter/pump because it was noisy. Curious as to why I find him gulping water from the surface as if he was thirsty. When in the pond ,while he was still small, he would disappear for weeks and then fashionably just show up. In hindsight he was probably isolating himself sick somewhere.
Still no match for a heron... though I think he escaped from one of those too judging by a huge scar on his side I found him with.
