I would really like to find the growing habits of these plants but so far I am not finding much if anything on the web.

When I've grown normals alongside variegates, the habits are really pretty much the same in the final analysis. The variegates generally are slower to grow, may not grow quite as large and are gonna want a whole lot more shade.

Thanks Craig they are starting to grow. I really like the way they look. I am sure mature specimens are pretty nice.

Here they can reach over a meter. I have them in the ground, on sun and some in sami shade. Some varieties can go to sleep over wither, and U can over winter without much light or water. Prune in spring and they will start all over again. They are similar to taro.
They look lovely. Dont give them too much shade. They are easy plants to grow.
