We have skimmers on all 3 of our mud ponds and never have any leaves or other surface debris.
The most important things in order are as follows:
1 - Genetics
2 - Water quality (water changes, stocking level, filtration,etc)
3 - Food - Way down on the list somewhere

ORP values are absolutely worthless IMO and TDS will be what it will be in most instances unless drastic measures are taken to muscle it.
