Those look like ulcers that are starting to heal. That's the white part you see. Do a large water change, be sure to use dechlor, and keep the water pristine.

Can't speak to koi as I have goldfish, but whenever the see or hear me, they swim like mad to the "feeding spot" and beg for food!
There are a lot of rivers and streams down here that are completely covered and blocked by WH. It's awful.
Do you have leaves in the bottom of your pond? The tannins in the leaves will change the water color.

Well water can be very low in oxygen. Needs an air pump with diffuser for one thing. I'll leave the rest of it to experts.
Frank's (Matherfish) suggestions are good for south Florida. Also, you might try going to a nursery (NOT a big box place) and see what they have growing in full sun. Bromeliads would also look nice,...
You might also want to float some pieces of styrofoam in the pond for them.

Koi do better in deeper ponds. Aim for 6 feet. Welcome to the forum!

Goldfish definitely have personalities.
I have found that goldfish will spawn at any time for any reason multiple times!
Another thing that can increase ammonia is spawning. You should probably test every day for a week or so. Your goldfish are beautiful!
